tender restaurant at Stock Exchange Hotel is celebrating the arrival of spring with the launch of a brand-new seasonal menu. the new spring menu, designed by Executive Chef Niall Keating, celebrates the fresh, seasonal flavours of spring with a lighter, brighter offering designed to welcome longer evenings. The new menu is available as part of a new lunch and early evening offering providing a new way to dine at tender with lunch starting at £19.50.

The new dinner menu showcases an elevated selection of dishes that highlight the very best of farm, sea and garden. For mains, guests can enjoy standout dishes such as Cornish Turbot, morels, lobster claw, shellfish bisque, samphire and spring greens. Barbary duck breast, black garlic, gem lettuce, Roscoff onion, black fig & orange purée, alongside vegetarian options like Wild Mushroom and comté pearl barley risotto with white asparagus and parsley sauce.

For those looking to share, tender’s big and hearty main dishes take centre stage and now showcase the best of spring. Standout options for two include a rich bouillabaisse of red mullet, monkfish, mussels and clams with garlic aioli and baguette or the impressive steak cuts such as a 600g salt-aged Lake District Hereford chateaubriand or a 1.2kg côte de boeuf are designed to be carved and shared at the table.

Desserts round off the menu with a focus on seasonal fruit created by tender’s talented pastry chef Miri. Highlights include rhubarb & hibiscus trifle and tonka bean crème brûlée with strawberries and Thai basil, alongside a curated British cheese selection and petit fours designed for sharing.

Guests can also enjoy a selection of snacks and lighter bites, from crab tacos with avocado, chilli and lemongrass to Cornish oysters served with fresh horseradish and lime, perfect for relaxed dining or sharing.

Join us for special Sundays at tender, where you can enjoy classic dishes such as cornfed roast chicken, nut roast, and sirloin of Hereford beef with all the trimmings. Complemented by delicious small plates such as homemade soup of the day, pork and apple sausage roll, date brown sauce, and don't forget yummy cauliflower cheese. Then finish with indulgent desserts such as sticky toffee pudding or blackberry & apple crumble.
